Here's a hint to make your stock divine: use white wine instead of vinegar to draw out nutrients over a 12-16 hour simmer. Also, roast the carcass first with onions and garlic. Then simmer with bay leaves and peppercorns. This will elevate your soup stock to a heavenly level. Our turkeys are Certified Naturally Grown. They are fed certified organic grain on pasture, moved weekly, eat bugs, and roost when they feel like it.
