Small Batch production is essential for monitoring quality and providing Custom Crafted possibilities.

We use Brass Die Extrusions and Traditional Italian Equipment to produce the desirable Shapes, Texture & Bite.

Fresh Pasta is air-dried (slower and cooler) for Flavor over a few days like old world pastas.…instead of completed within hours.

Our Chef oversees every batch and inspects the final product!

Ingredients We Use

Semolina (Durum Wheat), Water (some varieties also include eggs or all natural vegetables, herbs, spices and/or specialty grains)

Sauces are made from ‘real food’ ingredients including San Marzano tomatoes, fresh onions, garlic, basil and EVOO. We produce restaurant quality foods using traditional open pot cooking methods under the direction of our executive chef.

Our Practices

We source USA Origin Semolina Wheat and grains for all our pasta. All colors and flavors are created through herbs, vegetables, spices or additional specialty grains.
All pasta is extruded (pressed) on traditional Italian equipment and slow dried by a small team of local food enthusiastic staff!
Our sauces We produce restaurant quality foods using traditional open pot cooking methods under the direction of our executive chef.

Misc.

Most of our pasta is made without eggs and Vegan. Our facility does use eggs and share equipment so we list eggs as an allergen as a precaution. We do clean and sanitize equipment with special care after producing egg pastas.
